Cauliflower Curry with Cashew Nuts
1 Small cauliflower
1 Bell pepper
1 Small Carrot
1 Small Courgette
150 g Rice
4 tsp Spice Blend – Cauliflower Curry
1 Tbsp oil
200 ml Coconut milk
1 Handful of cashew nuts
Chop the onion, cut the cauliflower, bell pepper, carrot and courgette into equal cubes.
Cook the rice according to the instructions on the package. In the meantime, cook the cauliflower al dente for about 8 minutes and drain.
Fry the onion. Add the bell pepper and carrot and fry for about 2 minutes. Add the courgette and the Spice Blend – Cauliflower Curry and fry for about 2 minutes. Add the coconut milk and cauliflower and heat for another 2 minutes.
Serve the cauliflower curry with the rice. Garnish with the cashew nuts.
