Vegetarian Couscous Salad with Chickpeas, Feta and Raisins


For 2 people:
100 g Couscous
3 tsp Spice Blend – Couscous salad
3 Tbsp (olive) oil
150 ml Water
200 g Cherry tomatoes
150 g Peas (frozen)
130 g Chickpeas
1 Pointed pepper
100 g Feta
1 Handful of raisins
1 Tbsp almond flakes
Juice of 1 lemon
Fresh coriander


In a bowl, mix the couscous and raisins with the Spice Blend – Couscous Salad . Add 150 ml of boiled water. Keep stirring until the couscous is cooked.

Let the peas thaw. Dice the pointed pepper, cherry tomatoes and feta and rinse the chickpeas. Add the pointed pepper, peas, cherry tomatoes, feta, chickpeas, olive oil and lemon juice to the couscous and top with raisins.

Garnish the couscous salad with the almond shavings and coriander.
