Vegetarian Sweet Potato Salad with Avocado and Feta
For 2 people:
400 g Sweet potato
1 Tbsp olive oil
3 Tsp Spice Blend for Vega – Sweet Potato Salad
1 Spring onion
200 g Cherry tomatoes
100 g Feta
15 g Walnuts
2 Tbsp mayonnaise
Juice of 1 lime
Preheat the oven to 200 ° C. Cut the sweet potatoes into cubes of about 1.5 cm. Divide the sweet potato cubes over a baking tray and drizzle with the olive oil and the Spice Blend – Sweet Potato Salad . Bake the potatoes for about 20 minutes.
Cut the cherry tomatoes, avocado and feta into cubes, the spring onion into thin rings and chop the walnuts into small pieces.
Mix all the chopped vegetables, the feta and the walnuts in a bowl and add the baked potato cubes.
Make a dressing with the mayonnaise and the juice of the lime. Divide the dressing over the salad and serve immediately.
