CARIBBEAN PORK AND PINEAPPLE SALSA

Ingredients

Pork Loin Steaks
Marinade Caribbean PURE
1 Fresh Pineapple (Chopped)
2 Fresh Chillies (Thinly Sliced)
Small Bunch Coriander (Chopped)
Chilli Rings PURE

Method

Cut a pocket in the pork loin steaks and marinate overnight in Marinade Caribbean PURE as per the usage rate.
Mix the pineapple with the sliced chillies and chopped coriander and bind with a small amount of Marinade Caribbean PURE just to coat.
Fill the pocket with the pineapple mix and garnish with a sprinkle of Chilli Rings PURE.
Oven cook at 170°C Gas mark 4 for 20-25 minutes or until cooked through.
