Italian Kale with Meatballs and Sundried Tomatoes
English kale in an Italian way. Delicious with Italian spiced meatballs, sun-dried tomatoes, mascarpone and roasted pine nuts.
500 g Minced meat
1 kg Potatoes
300 g Fresh kale
100 g Sun-dried tomatoes, drained
250 g Mascarpone
40 g Pine nuts
1 Sachet of Mix for kale
1 Sachet of Mix for minced meat – Italian
2 Tbsp olive oil
Peel and halve the potatoes. Cut the sun-dried tomatoes into small pieces.
Place the potatoes in a pan with plenty of boiling water and steam the kale over the potatoes until both are individually cooked.
Meanwhile, mix the minced meat with the egg and the Mix for minced meat – Italian and combine well . Shape meatballs at approximately 30 grams each.
Heat 2 tbsp olive oil in a frying pan and fry the meatballs for about 8 to 10 minutes on medium heat until golden brown.
Combine all of the ingredients together. Sprinkle over oregano to taste.
