Mini Speculaas Cookies

During the Sinterklaas party the Dutch eat all kinds of delicacies, including spiced cookies. With this recipe making your own spice mini cookies is not difficult at all! The Spice Mix for Koek & Speculaas and the ground fennel seed give a delicious twist to baking. With this recipe you will make about 10 handfuls of speculaas cookies that you can enjoy with a number of people.

Ingredients

For 6 people:
250 g Self-raising flour
150 g Butter (unsalted)
125 g Brown sugar
15 g Spice mix for Speculaas
1 tsp Fennel seed ground
2-3 tbsp Milk
Pinch of salt

Method

Preheat the oven to 175 ° C.

Cut the cold butter into cubes and put this in a bowl together with the self-raising flour, the brown caster sugar, the Spice mix for Koek & Speculaas, the Ground Fennel Seeds and a pinch of salt.

Knead this together and add 2 to 3 tablespoons of cold milk while kneading until you have a nice firm ball of dough.

Let the dough set in the refrigerator for 1 hour.

Turn the dough into small balls of about 5 grams and place on a baking tray covered with baking paper.

Press the balls slightly with your finger and bake the spice nuts (if necessary, in parts) for about 30 minutes in the preheated oven.

Serving
Tip: Crumble the mini cookies over your dessert or yogurt in the morning, or make a tiramisu instead of lady fingers.
