Cut a pocket in the side of the chicken breast.
Mix equal amounts of sun blush tomatoes, diced red onion and chopped chorizo, season with Spicemix Del Mondo Flamenco and place a spoonful inside each breast.
Close the pocket, lay a rasher of pancetta down the centre and a slice of chorizo and secure with chicken bands.
Finish with World Grill Spanish Harbour PURE.

Oven cook at 180°c Gas Mark 4 for 20-25 minutes or until cooked through.
