Tandoori Pork with Apricots and Coconut

Ingredients

1kg Pork Loin
200g Soft Dried Apricots
50g Desiccated Coconut

80g  World Grill Indian Tandoori PURE
Yogurt Garlic Sauce
Spicemix del Mondo Masala PURE

Method

Butterfly the pork loin to create a flat surface, season with a generous coating of Spicemix del Mondo Masala PURE and a spoonful of Yogurt Garlic Sauce.
Place a layer of dried apricots and a sprinkle of coconut on the meat and roll up back into a joint, secure with sticks.
Brush with the World Grill Indian Tandoori PURE and another sprinkle of coconut.
