Vegetarian Pasta Salad with Broccoli, Cherry Tomatoes and Goats Cheese
A fresh vegetarian pasta salad with broccoli, cherry tomatoes, goats cheese and pine nuts.
Cut the broccoli into small florets, the cherry tomatoes into quarters, the soft goat cheese into cubes and the red onion into half rings. Roast the pine nuts.
Cook the pasta according to the instructions on the package. Rinse under cold water, add 1 tbsp olive oil and mix together.
Meanwhile, bring a large pot of water to the boil. Cook the broccoli al dente for 6 to 7 minutes. Drain the broccoli.
Mix the pasta with the red onion, cherry tomatoes and broccoli. Add the Spice Mix for Broccoli and 3 tbsp olive oil. Mix together. Garnish the salad with the soft goat cheese and roasted pine nuts. Finish with Parmesan cheese & serve immediately.
