Mediterranean Vegetable Pasta Bake

With this recipe you can make a simple vegetarian pasta dish in the oven. Delicious with courgette, aubergine, bell pepper, mushrooms and mozzarella.



For 4 people:
500 g Penne pasta
400 g Mushrooms
1 Courgette
1 Aubergine
1 Yellow pepper
1 Onion
200 g Mozzarella
150 g Grated cheese, of your choice
1 Passata à 700 grams
24 g Spice Blend with Miso Pasta Bolognese
3 Tbsp (olive) oil
Salt & Pepper, to taste


Preheat the oven to 180 degrees. Cook the penne pasta according to the instructions on the package.

Cut the mushrooms, courgette and aubergine into slices, the bell pepper into strips and the mozzarella into cubes. Finely chop the onion.

Heat the olive oil in a frying pan and fry the onion. Add the mushrooms, courgette, aubergine and bell pepper and fry all around for about 3 to 4 minutes.

Glaze the dish with the tomato sauce and add the Spice Blend with Miso Pasta Bolognese. If necessary, add salt & pepper to taste. simmer for about 2 minutes on low heat.

Mix the cooked penne pasta and mozzarella cubes into the pasta sauce. Transfer to an oven proof dish and sprinkle with the grated cheese. Bake this for about 10 to 15 minutes in a preheated oven, until the cheese is golden brown and melted.
